Chicken with Rice
(Pollo con el Arroz)

(Makes Enough to serve 6 to 8 scouts.)

Ingredients...
1.5 lbs Chicken breasts (cup up into bite size pieces)
(or use 4 to 5 pieces of frozen boneless, skinless breasts)
2 "13" or "14" oz. Boxes White rice (not family size!)
2 "13" or "14" oz. Cans of Cream-of-Chicken Soup
2 "13" or "14" oz. Cans of Chicken Broth
Dash of Pepper and/or Dash of Garlic

How to make...
Cut up chicken breast into small bitesize pieces.
Add all ingredients into a well foiled Dutch Oven.
Mix carefully not to break the foil liner.
(Note, the chicken broth acts as your water for the rice).

How to Cook...
Cover Dutch oven, place into fire ring.
Add 8 coals on top and 8 coals on bottom.
Cook for about 1 to 1.5 hours -or- until chicken
is completely cooked and rice is soft and
all of the liquid is absorbed by the rice.

Possible Additions or Substitutions...
Use Rice-a-Roni instead of plain white rice.
(Try Chicken, Chicken-&-Garlic, or Fried Rice flavors)
Substitute a Cream-of-Mushroom Soup instead of one or both
of the Cream-of-Chicken Soups
Pre-marinate the chicken into a flavor of your choice.
The smaller pieces the chicken is cut into the faster it cooks.
