Guadalupe Chili Pie
(Tarta de Ají de Guadalupe)

(Makes Enough to serve 6 to 8 scouts.)

Ingredients...
1 12-inch dutch oven
2 lbs. ground venison (meat may be pre-browned)
1 medium onion, chopped
1 teaspoon margarine
1 15-oz can chili beans
1 package chili seasoning mix
1 8-oz can tomato sauce
1 15-oz can Rotel
2 6-oz package cornbread mix(need to save eggs for this)

How to make...
Melt margarine in an open Dutch oven.
Add venison and onion and cook until browned.
Add beans, chili seasoning, Rotel, and tomato sauce.
Do not drain. Cover and cook for 15 minutes.
Prepare cornbread as directed on package and pour
on top of meat and bean mixture.

How to bake...
Cover and set Dutch oven on 10-12 hot coals.
Place 6-8 hot coals on lid of Dutch oven.
Cook for 20-30 minutes until cornbread is done.

Possible additions or substitutions...
If venison is unavailable replace with beef or any other meat.
If Rotel is unavailable then replace with any salsa.
To kick it up a notch add sliced jalapenos or hot
sauce to the corn bread mix.
Want cheese? Sprinkle it on top of the chili when served.
