Mexican Lasagna
(Lasagna Mejicano)

(Makes Enough to serve 6 to 8 scouts.)

2 lbs. ground beef(may be pre-browned at home)
1 large onion(chopped)
1 teaspoon garlic(optional)
2 one lbs. cans of crushed tomatos(paste optional)
2 packages of taco seasoning
1 4 oz. can of chopped olives(optional)
1 teaspoon season salt
1 large package of round tortilla chips
1 lbs. ricotta cheese(cottage cheese optional)
2 eggs
1 lbs. shreadded cheddar cheese

How to make...
Use dutch oven to brown meat with chopped onions
and garlic. Then discard grease safely.
Add tomatos, taco seasoning, olives, salt.
Mix ricotta cheese with eggs. Start with
clean dutch oven or line with aluminum.
Spread 1/2 of meat mixture on bottom of dutch oven.
Then cover with 1/2 of ricotta/egg mixture.
Then cover with 1/3 of cheddar cheese.
Then cover with layer of 1/2 of the tortilla chips.
Repeat layering again. End with top most layer
the last 1/3 of the cheddar cheese.

How to bake...
Cover dutch oven and cook for about 30-45 minutes,
with 8 coals underneath and 12 coals on top.

Possible additions or substitutions...
Can use tomatoe paste instead of crushed tomatoes,
but use slightly less amount. Garlic and/or Olives may be
omitted. Substitute cottage cheese for ricotta cheese.
