Mountain Man Breakfest
(Comida de Hombre de Montaña)

(Makes Enough to serve 8 scouts.)

Ingredients...
1 12-inch dutch oven
1 medium onion, chopped
½ green pepper, chopped
½ lb ground Wild Boar sausage (may be pre-browned)
1 32 oz pkg hash brown potatoes
1 dozen - 12 eggs
1 ½ lb cheddar cheese, grated
1 8-oz jar of salsa

How to make...
Preheat Dutch oven over 10 charcoal briquettes
and preheat lid with 14 briquettes.
Brown 1/2 lb of Wild Boar sausage.
Add onion and green pepper.
Remove from Dutch oven and drain on paper towels.
Wipe excess grease out of dutch oven and place
back over hot briquettes.
Stir in the 32-ounce bag of hash brown potatoes.
Fry until potatoes are golden brown, and then mix
the sausage, onions, and green pepper back in.
Break 12 eggs into medium mixing bowl and beat
thoroughly.
Pour over potatoes, sausage and onions.
Cover with hot lid and cook until eggs are almost solid.
Sprinkle with 1 1/2 pounds grated cheddar cheese.
Continue cooking until eggs set and cheese melts.
Just before serving, top with 1 8-oz jar of hot,
medium, or mild salsa, according to taste.

How to bake...
Cover dutch oven and cook for about 20-30 minutes,
with 10 coals underneath and 14 coals on top.

Possible additions or substitutions...
If wild boar is unavailable you can replace with
pork sausage or any other meat.
